What is the most mind-blowing psychology fact about human perception?

Was reading about how human memory isn't an exact video recording, but rather an active reconstruction reconstructed each time we recall an event.

What other psychological or cognitive phenomena completely challenge the way we view everyday reality?

Here is a fascinating one: 'Change Blindness' and 'Inattentional Blindness'.

Your brain only processes a tiny fraction of visual information in high resolution (about the size of your thumbnail held at arm's length). The rest is low-resolution peripheral estimation filled in by memory.

In famous experiments, an experimenter asking directions from a pedestrian was briefly swapped with a completely different person carrying a large wooden door between them. Over 50% of people didn't even notice they were speaking to a completely different human being with different clothes and voice!
Another crazy one is the 'Dunning-Kruger effect' inverted: highly competent people frequently underestimate their abilities because things that come easy to them seem trivial, assuming everyone can do it.
